To reduce the weight of the stock wheels, change to SZR wheels, which are 40% lighter than stock and not that expensive. Or take some marchesinis of a Laverda (3.5 and 5.0), although the rear wheel turns the wrong way round, it's not that obvious. To improve the brakes, install the front calipper of a Cagiva Mito (it's cheaper than looking for the same from ducati). All (also stock) brake pads are compareable for example to a ducati 916.
Throw out the airbox snorkel and the fuel pump. Get some shorter dog bones from MuZ to lift the rear. As I see you already lowered the forks for 15mm, well done. Install the first gear of an SZR, as it's longer than the MuZ/XTZ one.
Not that cheap, but highly efficient are parts from www.barkersbars.com
The supermonos were built in 94 by Ducati Hegemann in Germany and later on by Tigcraft in Britain. About the 93' models I'm not really sure, I think MuZ did that by themselves. The measurements, frames and bodywork were totally different than stock.

Hey Tom,
I live just up the mountain from you.
We should get together sometime - I've been racing my MZ since 1999, so I might be able to show you a few tricks. 
I raced against your bike back in the old Skorpion Cup series, when it was ridden by Alex McClean. We had some good on-track battles.
Here's a pic of me following Alex through Turn 7 at Mid-Ohio in 2001, and then a picture from last week in the same spot.

hi Trent,
We will have to get together some time. I need all the help I can get. I haven't even ridin the bike yet, but I can't wait. I'm shooting for VIR Aug 21 for WERA racer school, if my leathers (BB) get back in time. I've got the bike ready except for the catch pan. I'm going to make something to fit. I haven't changed anything on the bike yet, I'm going to see how it goes.
I talked with Chuck (the Company) and Barnical Bill this week and they both said you were still racing a MZ. Bill said that there where quite afew MZ riders around here.
